🍑 Homemade Apricot Galette

A simple summer dessert made with buttery pastry, fresh apricots, and a touch of almond sweetness.

Ingredients

For the pastry:

200 g all-purpose flour
100 g cold unsalted butter, cubed
1 g baking powder
A pinch of salt
1 tbsp sugar
3–4 tbsp cold water
7 ml lemon juice

For brushing:

1 egg yolk
10 ml milk

For the base:

5 g cornstarch
10 g sugar
20 g almond flour

For the apricot filling:

300 g fresh apricots, sliced
20 g sugar
10 g cornstarch
