
The Ginger Garlic Chicken I Make on My Busiest Days! One Pan, Big Flavor
Looking for a quick and easy chicken dinner that’s packed with flavor? This Ginger Garlic Chicken is one of my favorite recipes for busy days! The chicken is marinated in a delicious blend of garlic, fresh ginger, soy sauce, honey, and seasonings, then cooked with colorful bell peppers and onions in a rich, savory sauce. It’s ready in less than 20 minutes, making it perfect for busy weeknights without sacrificing flavor.
Serve it over fluffy basmati rice, with noodles, quinoa, mashed potatoes, cauliflower rice, or even tucked into a wrap with fresh vegetables. However you serve it, this recipe is comforting, satisfying, and guaranteed to become a family favorite.
Ingredients:🍗
Chicken marinade:
2 large chicken breasts : 600 g, 21 oz
Grated (or minced) fresh ginger: 1 tsp
Grated ( or minced) garlic: 1 tsp
Soy sauce: 1 tbsp
Olive oil: 1 tbsp
Honey : 1 tbsp
Corn starch: 1 tbsp
Salt : 1/2 tsp
Chili flakes: 1/3 tsp
Black pepper to taste
Rest of the ingredients:
olive oil: 4 tbsp
2 medium onions, 300 g ( 10.5 oz)
3 bell peppers ( preferably different colors)
Grated ginger: 1 tsp
Grated garlic: 1 tsp
Chicken bouillon: 1 cube
Hot water: 100 ml, about 1/3 cup
Soy sauce: 1 tbsp
Corn starch: 1 tbsp
Freshly minced parsley for garnish
For the rice :
basmati rice: 300 g, 10.5 oz
Salt : 1/2 tsp
Olive oil or butter: 1 tbsp
Cold water: 450 ml, around 2 cups

0:00 Cut the chicken into bite sized pieces and transfer to a bowl, next add the marinade ingredients, cover with plastic wrap and refrigerate for at least 30 minutes or overnight for more flavor.
1:35 Add olive oil to your pan and cook the chicken over high heat for 4-5 minutes, flipping them once or twice
3:15 remove the chicken from the pan and set it aside for later.
3:30 Add the onions to the same pan and stir fry for 2 minutes, next add ginger and garlic and cook for a minute, then add the peppers and cook for another 2 minutes.
4:18 In a small bowl, mix together the chicken bouillon cube, hot water, soy sauce and cornstarch.
4:46 return the chicken to the pan along with the sauce. Bring the sauce to a simmer, cover the pan and reduce the heat to low. Cook for 10 minutes, or until the sauce has thickened. Then turn off the heat. And garnish with fresh parsley.
5:07 Rinse the rice with water and add it to a small pot, add salt, olive oil and water.
5:51 Cover the pot and bring it to a boil over high heat, then reduce the heat to very low and simmer for 10 minutes.
6:00 Take the heat off the heat and give it a gentle fluff with fork or spoon and it’s ready to be served.
