🌿 Slow Living in Norway: Garden walks, Homemade ice cream and Wild flowers decoration

An unusual heatwave has arrived in Norway, bringing a heavy, humid warmth that feels completely foreign to the Nordics. On days like these, the biggest challenge isn't the temperature—it's giving yourself permission to slow down, tear up the endless to-do list, and just exist.

Join me for a quiet, slow day as I forage for wild summer flowers, talk about how I use nature to inspire our home interior, and make a classic Norwegian summer treat: homemade Krokan (Vanilla & Almond Brittle) ice cream.

ICE CREAM RECIPE: Classic Norwegian Krokan Ice Cream
This is one of Norway's absolute favorite ice cream flavors, introduced all the way back in the 1940s. It pairs perfectly with fresh, chopped summer strawberries.

For the Ice Cream Base:
♥ 2 eggs
♥ 1,5 dl sugar
♥ 3 dl heavy whipping cream
♥ 2 dl whole milk
♥ 1 tsp vanilla extract

For the Almond Brittle (Krokan):
♥ 150 g sugar
♥ 150 g almonds

Instructions ice cream base:
Mix eggs and sugar in a bowl
Add heavy whipping cream, whole milk and vanilla extract. Mix well.
Set to freeze for at least 6h.

You can use a Ninja Creami or an ice cream machine to get a even better result. Use the Ice Cream setting on the Ninja Creami.

Instructions for Almond Brittle: Melt sugar and almonds in a pan over medium heat until it turns into a golden caramel. Pour the mixture onto baking paper, let it cool completely until hardened, and then chop or crush it into small, crunchy pieces.

Add the Almond Brittle to the ice cream base as a mix in and topper when you are ready to serve.
