Blackcurrant Muffins Recipe
Yields approx. 10 large muffins | Prep time: 10 mins | Bake time: 20–25 mins
Ingredients
3 eggs
2 dl / 200 ml (¾ cup + 1 tbsp) sugar
50 g (3½ tbsp) butter (preferably TINE Meierismør / real butter)
1 dl / 100 ml (7 tbsp) whole milk
4 dl (1⅔ cups) all-purpose flour
1½ tsp baking powder
1 tsp ground cardamom
200 g (approx. 1½ cups) fresh or frozen blackcurrants
Instructions
1. Preheat oven: Set your oven to 190 °C (375 °F).
2. Make egg mixture: Beat the eggs and sugar together until light, pale, and airy (eggedosis).
3. Melt and combine: Melt the butter and mix it with the milk. Pour this liquid into the egg mixture.
4. Sift dry ingredients: Mix the flour, baking powder, and cardamom together, then sift into the batter. Gently fold to combine.
5. Add berries: Carefully fold in the blackcurrants. (If using frozen berries, fold them in gently while still frozen).
6. Fill and bake: Divide the batter into muffin liners (about ¾ full). Bake in the middle rack for 20–25 minutes.
