Fresh berries are a staple in the summer
and nothing's better than turning them into a fun dessert.
The cooking mom, Amy Hanton,
joins us now with a recipe for Cheesecakes of Strawberries.
That sounds absolutely amazing.
Good morning.
Good morning, Bria.
Good morning, everybody.
You know, it's gonna be a hot one.
So this is the perfect, fun, no-bake summer dessert.
They're so cute.
They're so easy.
And if you have strawberries,
I bet you have all the ingredients
to whip these up in no time
and they will make you look like a rockstar.
So let's get to it.
First, we're gonna do the filling.
I started out with some cream cheese.
I'm gonna do some powdered sugar and some vanilla.
So you've already got all that.
That's already in the pantry.
Exactly.
These are so fun to pull out at the end of a barbecue.
Just kind of surprise everybody.
So just use your mixer and beat that together
until it's nice and smooth.
That may just take a minute or so.
Then try and get yourself some of the bigger strawberries
because I'm gonna show you how cute these look
and how easy these are to do.
And you can totally have a lot of this done ahead.
So this is a nice big one.
So you wash them, you dry them,
then you're gonna take off the stem
and then kind of get in here with a paring knife
and create a little opening for your cheesecake filling.
And then the other thing I wanted you to do
is take a little sliver off the bottom
and this is gonna be able to make it fit on a plate
and kind of stand up like tin soldiers.
So here are our hollowed out strawberries.
Yeah, I mean, so easy.
This is like easy breezy.
In fact, my recipes in the summer,
I don't wanna be stuck in the kitchen the whole time.
We've had the kids home and company visiting
and I wanna be part of the action.
So all my recipes are quick, easy breezy.
And if you go to my website or Google The Cooking Mom
or thecookingmom.com,
I have hundreds and hundreds of recipes.
No bake desserts, the best ever pasta salad, potato salads,
wonderful summer side dish recipes from baked beans
to wonderful corn on the cob butter.
So just Google thecookingmom.com.
I also have, besides cooking, I love to travel.
I plan and host the most amazing group vacations,
have a great fall trip in our Cobra,
a bus trip to Mackinac Island, Michigan
to see the fall colors.
We're going to Nashville.
You've been asking in October, so much fun.
Also annual trips, booking now for my trip to Italy,
to Ireland, Porto Vallarta,
which is a great, wonderful winter getaway
and a Christmas market trip to Europe
in December to Germany.
It's fantastic.
So basically, I know it's so much fun though.
Dream come true.
I took the ingredients, the cream cheese,
the powdered sugar and the vanilla,
and I got a little fancy and put it in a piping bag,
but you don't have to, you can just spoon it on top,
but a little bit into the piping bag
makes it real easy,
and it just makes you look like your party was catered.
All right, so now we're going to top it
with the crust mixture.
So everybody loves the crust for a cheesecake, right?
I just took some graham crackers,
brushed them up in a Ziploc bag.
We're going to sprinkle some of those on top.
And then perfection.
These are really cute as is, but in the summer,
I love to do like red, white, and blue, everything,
not just for the 4th of July.
So I've got some fresh blueberries.
My husband is actually growing blueberries,
but they're also at the farm market and at farm stands.
And so we're just going to put a little blueberry on top,
that's optional, or a blackberry.
I know, these are absolutely adorable, super easy.
Anybody can make these.
Cheesecake stuffed strawberries,
they make you look like a rock star,
and they're just really fun and light and refreshing.
Perfect for summer.
I literally, that's like the perfect summer treat.
And it's literally something perfect for today as well.
Thank you so much, Amy.
Always good to have you.
Have a great day.
We'll see you next week.
All right, see you next week.
We'll be right back.
