鯇魚腩 – 500克
豆豉 – 15克
蒜頭 – 3瓣
紅蔥頭 –1個
薑 – 1塊

蠔油 – 1湯匙
蒸魚豉油 – 1湯匙
糖 – 1茶匙
胡椒粉 – 少許
🟢 做法:
1️⃣ 紅蔥頭、薑切小丁備用。碗中加入蒜蓉、薑米、豆豉、蔥白,潑入少許熱油,再加入蠔油、蒸魚豉油、糖及胡椒粉拌勻成醬汁備用。
2️⃣ 魚腩洗淨,吸乾水分後切件。 把調好的醬汁加入魚腩中,拌勻後醃5–10分鐘。
3️⃣ 燒熱砂鍋,下油爆香薑粒及紅蔥頭,放入魚腩及醃料汁,沿鍋邊淋入少許米酒或清水,蓋上鍋蓋中小火煮6分鐘。

🟢 Ingredients:
Grass Carp Belly – 500 g
Fermented Black Beans – 15 g
Garlic – 3 cloves
Shallot – 1
Ginger – 1 piece
Spring Onion – 1 stalk
Oyster Sauce – 1 tbsp
Seasoned Soy Sauce for Seafood – 1 tbsp
Sugar – 1 tsp
Ground Pepper – a pinch
🟢 Cooking Directions:
1️⃣ Dice the shallot and ginger and set aside. In a bowl, combine the minced garlic, minced ginger, fermented black beans and the white part of the spring onion. Pour a little hot oil over the mixture, then add the oyster sauce, Seasoned Soy Sauce for Seafood, sugar and ground pepper. Mix well and set aside.
2️⃣ Clean the fish belly, pat dry and cut into pieces. Add the prepared sauce and mix well. Marinate for 5–10 minutes.
3️⃣ Heat a clay pot and add some oil. Stir-fry the diced ginger and shallot until fragrant. Add the fish belly together with the marinade. Drizzle a little rice wine or water around the edge of the pot, cover and cook over medium-low heat for 6 minutes.

🟢 Cara Memasak:
1️⃣ Potong dadu bawang merah dan jahe, lalu sisihkan. Dalam mangkuk, campurkan bawang putih cincang, jahe cincang, kacang hitam fermentasi, dan bagian putih daun bawang. Siram dengan sedikit minyak panas, lalu tambahkan saus tiram, kecap asin untuk hidangan laut, gula, dan lada bubuk. Aduk rata dan sisihkan.
2️⃣ Cuci bersih perut ikan, keringkan dengan tisu dapur lalu potong-potong. Tambahkan saus yang telah disiapkan dan aduk rata. Marinasi selama 5–10 menit.
3️⃣ Panaskan panci tanah liat dan tambahkan sedikit minyak. Tumis jahe dan bawang merah yang telah dipotong dadu hingga harum. Masukkan perut ikan beserta bumbunya. Tuangkan sedikit arak beras atau air di sepanjang tepi panci, tutup, lalu masak dengan api sedang kecil selama 6 menit.

🟢 Paraan ng Pagluluto:
1️⃣ Hiwain nang maliliit na cube ang shallot at luya, saka itabi. Sa isang mangkok, pagsamahin ang tinadtad na bawang, pinong tinadtad na luya, fermented black beans at puting bahagi ng spring onion. Buhusan ng kaunting mainit na mantika, pagkatapos ay idagdag ang oyster sauce, Seasoned Soy Sauce for Seafood, asukal at dinurog na paminta. Haluing mabuti at itabi.
2️⃣ Linisin ang fish belly, patuyuin at hiwain sa mga piraso. Idagdag ang inihandang sarsa at haluing mabuti. I-marinate sa loob ng 5–10 minuto.
3️⃣ Painitin ang clay pot at lagyan ng kaunting mantika. Igisa ang hiniwang luya at shallot hanggang mabango. Idagdag ang fish belly kasama ang marinade. Budburan ng kaunting rice wine o tubig sa gilid ng palayok, takpan at lutuin sa katamtamang mahinang apoy sa loob ng 6 minuto.
