Recipes!
Sourdough Artisan Bread:
500 grams flour
350 grams warm water
50 grams sourdough starter
2 tablespoons oil (I use avocado oil)
2 tsp salt
Mix everything together in the evening (dough will be shaggy). Cover with a damp towel and let rest for 30 minutes. Stretch and fold your way around the dough, rotating the bowl till you're all the way around. Cover again with damp towel and let sit at room temp over night. In the morning, dump the dough on a lightly floured surface. To shape the dough, fold the dough over toward the center. Rotate slightly and fold over again until you've worked your way around the entire loaf. Flip the dough over and let it rest for 10 minutes. With floured hands, gently cup the dough and pull toward you a few times, rotating the dough to tighten the shape. Put parchment paper (or a well floured towel) and flip the dough upside down in the bowl. Cover with a towel, and let rise 30-60 minutes (dough should be a little puffy and risen slightly, but not doubled). Flip the dough on to a new piece of parchment. Sprinkle the dough with a little flour, and rub around before scoring the bread. Transfer the parchment paper with dough into a preheated dutch oven. Bake covered at 450 for 25 mins, then take the lid off and bake for another 10 mins.
Cool for an hour before slicing.
Sourdough Pie Crust (I used fresh milled flour):

Fresh Strawberry Pie Glaze (enough for 3 pies):
6 cups water
1 cup strawberry jello
1/2 cup honey
6 T cornstarch
3 T butter
3 quarts fresh strawberries
Mix water, jello, honey, and cornstarch in a large pot. Bring to a boil, and cook for 10 mins. Remove from the heat and add butter. Set aside to cool. Once cooled down, add strawberries (whole or sliced) and pour into pie crust (covered in melted chocolate - see video). Refrigerate several hours, then serve with whipped cream.
Vanilla Cake:
4 eggs
1 cup honey
1/2 tsp salt
2 tsp vanilla bean paste
2 T butter
1 cup milk
2 cups fresh milled flour (sifted)
2 tsp baking powder
Beat eggs until light. Add honey and stir well. In a sauce pan, heat butter and milk until it barely starts to boil. Stir flour, salt, and baking powder into egg mixture, then quickly beat in milk (just until combined). Pour into a pan and bake at 350 for 30 mins or until a toothpick inserted comes out clean.
Cream of Wheat:
5 cups whole milk
1 cup heavy cream
1 1/2 cups coarse ground wheat
1 T vanilla bean paste
Mix milk, cream, and wheat in a sauce pan and heat over med-high heat until mixture thickens and wheat is soft (this takes a few minutes). Remove from heat and add vanilla.

Bacon Jam:
1 pound thick sliced bacon (cut into 1 inch pieces)
1 large onion, diced
2 garlic cloves, minced
1/3 cup maple syrup
1/3 cup balsamic vinegar
Over medium heat, cook bacon until browned but not too crispy. Scoop the bacon out, and fry the onions and garlic. Add all the bacon back into the pan, along with the maple syrup and balsamic vinegar. Reduce the heat to low and simmer (uncovered), stirring occasionally until the liquid turns syrupy.
