Welcome back to Mimi's Organic Eats.
Today we're making a Caramel Pumpkin Spice Snack Cake.
This moist and fluffy pumpkin spice snack cake
is topped with my famous caramel buttercream from my bakery.
This is the fall cake that everyone will ask you for.
Let me show you guys how to make it.
So the secret ingredient to this
Caramel Pumpkin Spice Snack Cake
is my homemade true caramel sauce.
I make this ahead of time because we want it to be
cool enough before beginning the cake.
So you guys want to plan to make
the caramel sauce the day before.
I'm gonna link my recipe for you guys in the description
so you guys can make the caramel sauce from my bakery.
So once you guys have your caramel sauce made
then it's time to preheat the oven to 350 degrees.
So I'm gonna use my hand mixer today for the cake
but if you guys want to use a hand mixer that also works too.
So first we're gonna add in our softened butter.
Then we're gonna add in our cane sugar.
And then we're gonna add in our dark brown sugar.
So if you guys only have light brown sugar that also works too.
The only difference between light brown sugar
and dark brown sugar is the amount of molasses.
The light brown sugar has less molasses,
dark brown sugar has more molasses.
So with the dark brown sugar we're just gonna get
a little bit richer flavor because of that added molasses.
Now we're gonna mix on low until combined
and there's no butter chunks.
Next we're gonna add in one large egg.
Then our avocado oil.
Then we're gonna add in our pumpkin puree.
And then our sour cream.
You guys could also use plain Greek yogurt
in place of sour cream if you want.
Now we're gonna mix on low to combine the wet ingredients.
Next we're gonna add in our all-purpose flour.
So we're using all-purpose flour here
and not cake flour if you guys notice.
So one of the reasons I'm doing this
is because this cake has pumpkin in it.
And pumpkin's gonna make sure that this cake
is super moist and super tender.
All-purpose flour has a higher protein content than cake flour
so that's gonna help give this cake
a little bit more structure.
And so that's gonna help a lot when making a cake
that has pumpkin that's already going to be
super moist and tender.
So next we're gonna add in one teaspoon of pumpkin spice.
And I like to use my homemade pumpkin pie spice mix
which I'll link in the description for you guys.
But store-bought also works too.
And we're gonna add in three quarter teaspoon of baking powder.
And then last half a teaspoon of salt.
Now we're gonna mix on low until everything is combined.
And you want to make sure you scrape down
the sides of the bowl partway through mixing.
This is going to ensure that you get
a nice and smooth cake batter.
Then we're gonna line a nine by nine inch baking pan
with parchment paper and transfer the cake batter
and spread it out evenly.
Now we're gonna bake this at 350 degrees
for about 35 minutes or until a toothpick
inserted in the center comes out clean.
So now that our cake is cooled,
we're gonna make up our caramel frosting.
So I have my softened butter in my stand mixer.
If you guys want to use your hand mix for this,
you can do that as well.
I just always like making frosting
so much better in the stand mixer.
Next we're gonna sift our powdered sugar
right into the mixing bowl.
And I just like to weigh it because it's so much easier.
Then we're gonna add in half a cup of heavy whipping cream.
And then the best part which is our homemade caramel sauce.
Now we're gonna mix on low until everything is combined.
Then you're gonna speed the mixer up to high
and whip for two to three minutes
or until it's light and fluffy.
You wanna make sure that you scrape down
the sides of the bowl partway through mixing.
This is going to ensure that you have
a smooth and creamy frosting.
So now that we have our frosting made,
we're gonna remove the cake from the pan
and add the frosting right on top.
Now to get the perfect caramel swirls, it's super easy.
All we need to do is drop little spoonfuls
of caramel all across the cake.
Then you're gonna take the back of the spoon
and just swirl it around.
And now this beautiful snack cake is ready to serve.
