Mexican Marinade Pork Ribs Al Pastor Smoked Ribs

Al Pastor Marinade
6 Guajillo chillies
4 Ancho chillies
8 garlic cloves
1/2 white onion
1g mex oregano
25g /1 tablespoon chipotle chilli paste or 2 chipotles in adobo sauce
5g white vinegar
50g pineapple juice
50g achiote paste
100g ice cubes or cold water
10-15g salt (taste and adjust, it should be slightly too salty!)
