Braised Pork Ribs Recipe | So Tender, Juicy & Flavorful!

Ingredients:
• 850g pork ribs
• 25g ginger
• 1 star anise
• 3 bay leaves
• 3 dried chilies
• Some green onions (optional)

Blanch the ribs:
• Add ribs to a pot of cold water
• Add 15g ginger and 1 tbsp rice wine
• Bring to a boil and skim off the foam

Make the sauce:
• 1 tbsp rice wine
• 2 tbsp light soy sauce
• 1/4 tsp dark soy sauce
• 1 tsp oyster sauce
• Mix well

Make starch water:
• 2 tsp cornstarch + 100ml water

Cook the ribs:
• Heat oil over medium-low heat
• Add rock sugar, stir until melted and golden brown
• Add ribs, stir-fry until lightly browned
• Add ginger, star anise, bay leaves, and dried chilies, stir for aroma
• Pour in the sauce, mix evenly
• Add 800ml hot water (just enough to cover the ribs)
• Bring to a boil, then simmer on medium-low for 50 minutes
• Add 1/8 tsp salt and 1/4 tsp sugar
• Add the starch water and cook on high heat until the sauce thickens
• Sprinkle green onions if you like
