Ingredients:

For the salad:

1/2 cucumber, diced
2 celery stalks, sliced
150g cherry tomatoes, halved
4 Romaine lettuce or Iceberg lettuce leaves, chopped
200g canned beans, rinsed and drained
1 tablespoon grated Parmesan cheese

For the dressing:
2 tablespoons lemon juice
1 teaspoon mustard
3 tablespoons olive oil
Salt to taste

For the toasted bread:

3 slices of sandwich bread, cut into small cubes
Olive oil for drizzling:

1 teaspoon dried garlic cloves
Salt to taste

Instructions:

1. In a large bowl, combine the cucumber, celery, cherry tomatoes, and lettuce.

2. Mix well. At this stage, you can refrigerate the salad until ready to serve.

3. Add the drained beans.

4. In a small bowl, whisk together the lemon juice, mustard, olive oil, and salt.

5. Pour the dressing over the salad and mix well.

6. Add the grated Parmesan cheese and mix again.

Making Crispy Toast

1. Cut the bread into small cubes.

2. Drizzle with olive oil.
