💛 Welcome to midsummer in Finland. I started the day at home by watering the plants and preparing a Midsummer feast that included fresh-baked peach cake, a strawberry-cherry salad, baked potatoes, mushrooms, and grilled beef. The next morning, I took my dog, Hilma, and my husband, Hannu, deep into the forest to visit a stunning hidden river that Hannu used to explore as a child. It was so peaceful and completely isolated. We spent the day fishing and caught a few fish before heading back home for a relaxing sauna with our dog. To end the perfect day, I cooked our fresh catch for dinner, serving it with saffron rice. 💛 🍑 Summer Peach Cake 🍑 Soft, light, and perfect for coffee time in spring sunshine ☕🌸
🧺 Ingredients 📌
Cake Batter: 200 g all-purpose flour
1½ tsp baking powder Pinch of salt
115 ml oil/butter, room temperature
150 g sugar
2 eggs
1 tsp vanilla extract
120 g plain yogurt or sour cream Zest of 1 lemon
½ tsp cardamom 2–3 fresh peaches, sliced thinly, or canned peaches for uniform slices
Topping: 1 tbsp brown sugar Powdered sugar after baking
👩🍳 Instructions 📌
1. Preheat the oven to 175°C
2. Grease and line a 9-inch cake pan.
3. Make the batter In a bowl, whisk: flour baking powder salt In another bowl: Beat oil/butter and sugar for 2 minutes Add eggs one at a time Mix in vanilla extract, yogurt, cardamom and lemon zest Fold dry ingredients gently into the wet mixture.
4. Add peaches Spread batter into the pan. Arrange peach slices beautifully on top. Sprinkle brown sugar over peaches.
5. Bake Bake for: 40–50 minutes until golden and the center is set.
6. Finish Cool slightly. Dust with powdered sugar. Optional: serve with whipped cream drizzle honey add toasted almonds
