This French yogurt cake with lemon, walnuts, raisins, and apricots is incredibly soft, moist, and fragrant. A simple yogurt cake recipe, requiring only a few ingredients, and perfect to enjoy with coffee or tea. The combination of fresh lemon, delicate dried fruit, and crunchy walnuts makes this cake exceptionally delicious.

Recipe:
3 eggs .
A pinch of salt.
1 teaspoon vanilla sugar or vanilla extract.
150 g sugar (3/4 cup / 5.3 oz). Beat well with a mixer for 2-3 minutes.
Mix well until smooth.
120 ml sunflower oil (1/2 cup / 4 fl oz).
120 g Greek yogurt (1/2 cup / 4.2 oz).
Zip of one lemon.
Juice of one lemon.
260 g all-purpose flour (2 cups / 9.2 oz).
Add flour in two stages for better mixing.
15 g baking powder (1 tablespoon / 0.53 oz).
Mix well.
Mix all ingredients until smooth.
60 g dried apricots (1/3 cup / 2.1 oz).
60 g walnuts (1/2 cup / 2.1 oz).
50 g raisins (1/3 cup / 1.8 oz).
Removable bottom cake pan, 22 cm (8.6 inch) in diameter.
Grease the baking pan with butter to prevent the parchment paper from shifting.
Bake for 40–45 minutes at 180°C (356°F).
4 full tablespoons powdered sugar (80 g / 2.8 oz).
1–2 tablespoons Greek yogurt (20–40 g / 0.7–1.4 oz).
