■ Ingredients: Serves 3-4
◯ 2 sheets Frozen puff pastry (11×18cm)
[A] 1 tbsp Olive oil
[A] 1/4 Onion
[A] A pinch of Salt
◯ 60g Spinach
[B] 4 Eggs
[B] 50ml Heavy cream
[B] 15g Grated cheese
[B] 3g Salt
[B] Ground black pepper
◯ 200g Salmon
◯ 1 Avocado
◯ 100g Cream cheese

■ Instructions
《 The Crust 》
① Let the frozen puff pastry thaw at room temperature for about 10 minutes.
② Roll out the pastry thinly, line the tart mold, and prick the surface with a fork.
③ Cover with aluminum foil and place tart weights on top.
④ Bake in a preheated oven at 338°F for 50 minutes.

《 The Filling 》
[Preparation] Thinly slice the onion and avocado. Cut the spinach into 5cm pieces. Salt the salmon, refrigerate for 10 minutes, then rinse and pat dry.
① Heat [A] in a pan and sauté the onion until softened. Add the spinach, sauté until wilted, and remove from the pan.
② In a bowl, mix [B] well. Thinly slice the salmon.
③ Layer the ingredients in the baked crust: ① → salmon → avocado → cream cheese. (Pour in the egg mixture gradually). Finally, top with salmon, avocado, and cheese.
④ Bake in a preheated oven at 320°F for 40-50 minutes. *Test with a skewer; it's done if it comes out clean.
⑤ Let it cool and cut into your desired size. (Chilling in the refrigerator makes it easier to cut).
