5 eggs
125g sugar
1 sachet vanilla sugar (7g)
160g Greek yogurt
115g neutral oil (sunflower, rapeseed, flaxseed)
230g flour (T45)
13g baking powder
1 pinch of salt
● For the chocolate cake:
approximately 177g base batter
1 tbsp unsweetened cocoa powder (6g)
2 tbsp almond milk (20g)
55g dark chocolate chips
● For the blueberry lemon cake:
approximately 177g base batter
1 tbsp freshly squeezed lemon juice (10g)
1 tbsp almond flour (10g)
Zest of one organic, untreated lemon
90g fresh blueberries
A little lemon/yuzu jam for decoration
● For the peanut caramel cake:
approximately 177g of base batter
1 tbsp homemade peanut praline (15g)
40g unsalted, natural peanuts
55g caramel chips (fudge)

● For the orange cake:
approximately 177g of base batter
1 tbsp freshly squeezed orange juice (15g)
1 tbsp almond flour (12g)
Zest of one (organic, untreated) orange
20ml orange juice for soaking the cake
homemade candied orange zest (zest of one orange, 120g water, 60g sugar / use the cooking syrup to brush the cake. Decorate with candied zest)
● For the raspberry almond cake:
approximately 177g of base batter
1 tbsp. 12g almond flour
85g raspberries (fresh or frozen)
Sliced almonds
Icing sugar for decoration
