Meringue Roulade Cake

150 grams egg white
200 grams sugar
15 grams cornstarch
1/4 tsp lemon juice

-Combine egg whites and lemon juice in a mixing bowl.
-Whip and start adding sugar gradually as soon as bubbles starts to form.
-Add cornstarch just before peaks starts to form
-Continue whipping until sugar has dissolved and the mixture is glossy
and peaks have formed
-Spread evenly on a baking sheet. In the video, I am using quarter size sheet pan or 33x25cm
-Bake at 150℃ for 25 minutes (baking time can vary depending on your oven and size of pan)
-After taking the cake out of the oven, cover the top with parchment paper and flip immediately and remove parchment paper
-Let it cool completely before filling it (whipped cream with fresh fruit or fruit curd)
-Gently roll the cake into a log shape, let it sit in the fridge for at least 2 hours.
-You may decorate it or eat it as it is.
