In February of 2022, I was honored when I was asked to be an official judge at the 1st annual Pig Roast Bowl in Miami, Florida! Come with me as I eat and judge some incredible pork in my hometown of Miami, Florida!

The competition consisted of 25 pig roasters who had won various competitions around Miami, so these are the best of the best! And best of all, it all took place at my old high school! I couldn’t wait to eat some barbecue pork!

First, I met Ray, who was roasting a whole hog, Cuban-style with cherry wood and hickory. I also met Ramoncito and another cook who is following in his late father’s pig roasting tradition.

Next, I met Jeanette and Andres from Sergio’s Restaurant. Jeanette is a follower of mine! Then, I saw a mini cooker inside a trailer.

The next cook I met was slow-cooking for 3.5 hours and the pig looked incredible. I loved the dark color and the crispy-looking ears.

Each cook had a slightly different way of cooking their pig. The next ones were from Fallen Heroes United, and had scored the back of the pig. Waxin from Locos X Grill was slow-cooking for 6-7 hours over logs and coal.

Riko’s friend Gian Carlo fro Mr. And Mrs. Bun was making his pig gaucho-style! He roasted it with greens and chilies under the pig.

Anthony from The BBQ & Craft Company makes a 100-pounder that he’d been cooking since the previous night.

I also met Karl from Hate Monday Tavern and Karin, who was making some pork belly and a salty and crunchy pig. I tried some chicken salad and salsa with crackers and some spicy chicharron!

Next was a tomahawk steak with a lot of fat and meat. It was nice and juicy! Then, I watched another butcher a New York strip.

The team from Giardino Salads was making a traditional Cuban pig marinated in a citrus cilantro dressing! Another was making corn with crema and tajin.

Next, Riko introduced me to Phil, the sponsor of the Pig Bowl and the trophy provider!

I tried a refreshing Mexican-style lager with Mathew from Tres Toros. Then, I tried a pork rib from Hate Mondays. The meat fell off the bone!

Next, I saw a few more pigs and sampled some more pork. I also tried some amazing ceviche containing octopus, corn, and white fish from Aromas Del Peru.

Then, I met Riko’s kids, who wanted to meet me! Then, his friend Louis told me all about the trophies. Then, finally, it was time for me to start judging! I had 25 samples to try!

We had to judge the flavor, the chicharron, and the presentation. There were so many tasty ones but it was a lot of pork to get through!

Winners were announced in each category and then an overall winner was announced! What an awesome experience!
