🇴🇲OMAN TRAVEL: https://www.instagram.com/officialomantravels 🇴🇲KHALID: https://www.instagram.com/salalah_fast_tour 🌎 MY TRAVEL/FOOD BLOG: https://davidsbeenhere.com/ After an amazing two days in Salalah in southern Oman, my time in the city was nearly over. Come with me on one last hurrah here as I enjoy some incredible Omani mountain food for dinner in Salalah, Oman! My friend and guide Khalid and I would be wrapping up my time there in style, with a unique mountain food feast. Khalid teased that I’ve never tasted anything like it, so I was excited to dig in! 👕 DAVID’S BEEN HERE MERCH: https://teespring.com/stores/davids-been-here We were with some guys who were preparing dishes by the side of a highway in the middle of nowhere. They were preparing dried camel meat, which they boil and mix with rice to make a dish called kabsah. We also had a campfire with stones from the mountains, which they’d boil milk and bake bread over. Next, we had some Omani coffee with cardamom and onions. Then, Khalid joined in and helped them cut the camel and I helped tend to the fire, where they were boiling some tea. They were using a blowtorch on the rocks, which turned the nearly white! I tried it myself, but my hands were too hot! They also had some cow milk! Next, they added the camel meat, tomatoes, onions, and garlic to a pressure cooker. Later, they’d add rice. They also had some cow milk, which they added the boiling hot stones to. I’d never seen anything like it! They also were making a flour and water dish called aseedah. It was very thick and pasty and hard to stir and mix! Then, they heated some cow oil next to the fire and added some to the paste to loosen it up. Meanwhile, the milk had a smoky taste that was easily the most unique milk I’ve ever had in my life. I don’t consume a lot of dairy, but this was great! Next, they took some bread dough and spread it directly on top of the hot stones on the campfire! They also put hot stones on top to help it cook! Then, they added more cow oil to the paste. By then, the bread was ready! The rocks were stuck in it. It was the most unique bread I’d ever seen. Meanwhile, the camel stew was ready for the rice. I tried a piece of the camel. It was a little crispy and so tender, it fell apart in my mouth! They added some honey to the aseedah. Then, you get a bit on your finger and dip it into the cow oil. It was really nice and had a hint of sweetness from the honey! I loved that the honey was a bit thinner than usual. I would have eaten more but we had more dishes to eat! Next was the kabsah, which was the dried camel and rice dish with garlic and vegetables. They added the other camel on top. While we let it cool, we went for the bread, which was smoky and crispy in some spots and doughier in others. I loved the camel meat, which was outstanding. It was still really hot—so hot I could barely dig in with my hands. The bone marrow was also fantastic! What an amazing local meal before it was time for me to head to the airport back to Muscat! Good evening everyone, this is David Hoffman from David's Been Here coming at you from
beautiful Salalah, Oman with my friend and guide, King Khalid.
And tonight is my last night here and we're doing like a mountain dinner, beautiful setting
out in the middle of nowhere.
What are we doing?
Tonight we have special dinner for you, mountain dinner.
This is very special and maybe I think this is the, never ever you taste it in your life.
Never tasted this in my life.
Something special.
Amazing.
Something different tonight.
Awesome.
Guys, so we have a little fire over here.
See the guys already prepared all for the dinner already.
So he's cutting up some camel, right?
Some dried camel right there?
Yeah.
Look, right here guys, we have some dried camel.
Oh, it's going to be great.
So can you eat this like, like this?
We cook like the boiled it.
Okay.
After that, before get rip, we make mix it with the rice, white rice.
And that's it?
That's it.
We use this stones, hot stones to cook the milk and also for bread.
We will cook some bread there.
So this is all stones.
They make in the ground stones, make wood and also top of the wood again, stones, but
clean stones.
Clean.
We clean them first.
Okay.
After that, we make fire.
After around one hour, it's going to get very hot.
We will use the stones to cook the milk and also you can cook also some bread, local bread,
like bread on the top of the stones.
On top.
Wow.
And so where do these stones come from?
From the sea or from the mountains?
From the mountains.
Okay.
From the mountains.
And then over here, he's starting a fire.
Wow.
He's, he's nuking it with that torch.
You my friend, good?
Yeah, good.
Wow.
We're all with the lights out here.
It's so dark.
If we don't have lights, you don't see anything.
Oh, he's boiling some water right here.
It's amazing.
Just torching that thing.
So we have here Arabic coffee for me.
Ooh, nice and hot.
Mm hmm.
Oh man.
This is the best.
I missed this.
We didn't have this today.
This is so good.
Lightly roasted cardamom right here.
He's going to cut up some onions.
They put you to work, huh?
Yes.
All especially for you tonight.
What's that, tea?
Karak?
Yeah.
Karak.
Not karak, tea.
Just tea, regular tea.
Man, this guy just keeps nuking this.
He has to get it hot, hot, hot.
Put that right in there.
Ooh.
So different dish here first.
And over there, we're making some tea.
He's cutting up some garlic, some tomatoes, some onions.
And Khaled is doing the camel.
Ooh, look at that.
The rocks.
This guy doesn't stop with the rocks.
So hot.
Man, the rocks are turning white.
Almost like coal, right?
But it's just like, it's too hot.
Too hot.
So the way he does it is that he starts the fire beneath it with a bunch of wood.
Then he adds the rocks.
Then he literally nukes it with this.
It's like, shh.
The tea's going to be ready so fast.
Whoa.
You want me to do it?
All right.
Right there.
Oh.
Yeah, you can't even touch that.
Oh, it's too hot.
My hand.
Oh, oh, oh.
That is like way, way too hot.
Can't even be near it.
What do you think it is?
Like, I don't know, 50 degrees?
70 degrees?
More.
That.
No, you can't even touch it.
Your fingers will melt.
Literally your fingers are going to melt if you touch that.
Whoa.
It's pretty amazing out here.
Got multiple fires going.
So what's next, Kalle?
What is he going to do next?
He's going to throw something in here, right?
So he's going to start this dish.
Over here, he's starting the tea, but he's going to also put bread.
Right there.
Okay, good bread, right?
Fluffy bread.
Thin one.
Okay.
How's that tea?
It's really hot.
Hello, hello.
Hello, guys.
How are you?
David, pleasure.
Syed Al Farami.
Pleasure.
Nice to meet you.
So he's putting all the camel meat in this pot to boil.
Oh.
It's like hitting me.
So, Kalle, what exactly is he doing?
Now we're cooking the milk with the hot stones.
Milk and hot stones.
Kalle's been raving about this the whole night.
He's like, you're going to taste the best milk of your life right now.
And this isn't camel milk, right?
This is a mix.
Cow milk.
Cow milk, cow milk.
Okay, cow milk.
Perfect.
And so this dish over here that they're doing is the white caspa, mountain caspa.
So what they did is they added the camel meat, tomatoes, onions, garlic, and green chilies
into the pressure cooker.
It's going to sit there for 30 minutes.
And then it'll be like 90% done.
Then they'll add the rice.
So that's sort of how that dish works.
And we're doing the milk.
It's going to be great.
Oh, the stones, the stones.
Ooh, ooh.
This is amazing.
It's like they throw the rocks in.
It's like scorching.
The milk is simmering.
It's boiling.
The rocks are boiling and the milk is boiling.
It's crazy.
I've never seen this before.
Wow, that's insane.
It's so hot.
The rocks are so hot.
Oh, man.
Look at that.
This just bubbles up.
Oh, he's going to add some cold milk.
This keeps going up, huh?
Whoa, it's overflowing.
Yeah, it keeps cooling.
Wow.
This is insane.
What is he adding?
Flour?
Yes.
Right now he's adding flour to this pot.
So Khaled, what is this dish exactly?
What does he eat?
They call it Asida.
Asida.
And what is it?
I mean, it's just salt, flour?
Salt, flour, water.
And they mix it all together.
And they make it more soft.
Okay.
It looks very similar to super thick mashed potatoes.
But it's not.
It's just flour.
Want to try?
He's going to let me try.
Oh, honey.
Oh, my gosh.
How does he even do this?
It's so thick.
It's like stuck.
It's so pasty.
Is he going to add more water?
It's going to be like this, super thick.
Come on.
Yalla.
Oh, this is tough.
It's a workout.
Okay.
Oh, my gosh.
How does he keep doing that?
Oh, my gosh.
Yeah, I know.
But that hurts.
One hand.
Fresh cow oil.
Cow oil.
Oh, he's going to heat it up, huh?
So he puts it on the side and lets it heat up.
Nice.
It's sugar and oil.
It's going to get sweet, huh?
Now he's taking out the stones out of the milk.
The stones are still on fire.
Now it looks like a thicker puree.
The oil like loosened it up a little bit.
Milk's ready?
Milk ready, yes.
Oh, yes.
Fresh milk.
Thank you.
You're welcome.
I'm going to try it here in the light.
Let's see how good this milk is.
It says the best milk of my life.
Man, it tastes like smoky rocks.
It is so different.
It's smoky milk.
It's still nice and hot, though.
I'm going to let it sit for a second.
This is the most unique milk I've ever had in my life.
I thought yesterday's milk, directly from the camel, was unique.
This one's something else.
I'm not a big dairy person.
I don't really eat that much cheese.
I don't drink milk, but this is good.
You were right, Khaled.
It's great.
So how's he going to do this?
Is he going to throw bread in there?
Wow.
Okay.
So how's he going to put the bread?
Just directly on top?
On top, I thought.
What?
That's insane.
How does he even take it off?
How does he flip it?
I love every single dish here.
It's completely unique.
I've never seen this anywhere else in the world.
Rocks with…
Oh, my gosh.
So he literally is covering the whole thing.
The whole thing in rocks.
How long does he let it sit there?
Because he just covered the whole thing in rocks.
15 to 20 minutes.
Just like that? 15 to 20 minutes?
Look, guys.
The bread is already fluffing up.
It's cooking so quick.
Literally five minutes.
It's done.
Okay.
That's almost ready, huh?
He's going to plate it now?
Wow, it's like super sticky.
Wow.
It's super thick, huh?
It's still so hot.
Oh, it's going to be hot, huh?
Yeah, he flattens it out.
It cools down like this, right?
So you just fill it up with oil in the middle.
Incredible dish, huh?
It looks great.
Finished.
That's it? You're done?
So you're opening the bread?
Wow.
Look at that.
I can't even touch it.
It's stuck.
This is the most unique bread of my life.
Really?
Yeah.
I've never seen bread on rocks like this.
Oh my God, look at all the rocks.
The rocks are stuck.
It's like breaking it.
So he's basically grilling fat right there, right?
Yeah, this is now the fat.
We need to make it oil.
Nice.
So he's going to make the oil using the fat.
Oh, nice.
Look at that.
Super nice simmering.
Beautiful.
Is there added salt?
Yeah.
That's going to be amazing.
So you're going to just throw rice in there, huh?
Not yet.
Yeah, not yet.
Oh man, look at that bone.
It's amazing.
Two dishes are ready.
One to go.
Garlic in there?
Straight though.
He didn't chop it up or anything.
This camel meat looks amazing.
The spoon stands.
That means the water level is perfect.
Wow.
I want to eat a piece right now.
Can I take one?
Take a piece?
That's so good.
It's hot, but wow.
Wow.
It literally just fell apart in my mouth.
And a little crispy.
A little crispy.
Oh, wow.
That's perfect.
I can't wait.
So we're going to mix this with the rice?
No, no, no.
No.
The rice is separate.
Oh, give me all this now then.
This is it.
We're trying this dish.
That's honey.
You're adding honey?
Yeah.
This is honey from the mountain.
Oh, wow.
So making it sweet.
Yes.
So this is my hole, right?
And you're going to open another hole?
We can share.
No problem.
Yeah, yeah.
Of course.
No problem.
Okay.
Is it hot?
With honey, huh?
I guess I'll just try it alone first.
Are you at it?
Okay.
Just dip it in there.
Mm-hmm.
Mm.
Nice and sticky.
Thick.
Pasty.
A little sweet because of the sugar.
Mm.
Like cow oils.
Mm.
That was nice.
Mm.
The honey is even better.
Right?
Amazing.
So you're supposed to make...
So you do that hole so you can just dip it, right?
Like that?
Mm.
The honey is incredible.
Not too thick.
This is also nice.
Yeah, it's very nice.
But the honey is not too thick.
It's more like watered down, no?
Yes.
Mm.
This is a really filling meal.
Mm.
It hits your stomach, you know?
Mm-hmm.
Mm.
It's amazing.
If I didn't have three more dishes to try,
I would just eat this whole thing.
Mm.
I'm doing it the way that I only get one finger dirty.
Yeah.
Mm.
It's nice.
Wow.
Amazing camel.
And the garlic is hot.
It's like boiling.
Oh, wow.
Look at that rice dish.
A mountain of rice.
Oh, wow.
Oh, you're going to drop it all on top?
Oh, my gosh.
My friend, you're back.
Khaled.
Yes.
I'm ready to rock and roll, man.
Let's eat.
I want to start with the rice,
but the rice is so hot.
The other day in the desert,
I burned my hands eating rice this hot.
Yeah, like let it cool down for a minute.
Oh, yeah.
I mean, that broth right now?
Amazing.
Everybody's digging in?
Okay.
I can't even touch that.
Oh.
It's hot, yeah.
It's too hot.
It's hot.
It has to cool down for a second.
Let's try the stone bread.
Oh, my gosh.
It's stone bread.
It is stone bread.
It is nice.
Nice.
I mean, it's bread that was cooked on stones
and stones on top.
Ooh, it's cracking.
Straight up stone bread.
Ooh.
Mm.
Not so much stone.
It's really hard.
Mm-hmm.
It tastes stone.
It tastes like smoky bread.
And it has some parts that are a little doughy.
It's still very hard, though.
Good bread, though.
Mm-hmm.
All right, let's get into this.
Guys.
How are you eating this rice?
It's so hot.
Mm-hmm.
From the top.
Like that.
Ooh, it's still so hot, though.
This guy.
Pro.
Mm.
It's a man fat.
Loving the bread, though.
I mean, are you from the sun?
Come on, guys.
It's really hot.
I mean, I get it.
You're going to eat it super fresh, right?
But, wow.
So, I went into his spot.
See, his spot's here.
I'm already inside.
Mm.
Outstanding camel.
Wow.
Down here.
Ooh.
I said it's still too hot.
I can't get anything cold.
Ooh.
I can't.
I don't want to burn my hand.
Like that.
Mm-hmm.
Get some more meat.
Mm.
Oh, like that?
Mm.
It's a good piece.
Hot.
Mm.
Perfect.
Oh, my gosh.
It is hot.
Ooh.
Too hot.
Here is the bone marrow right there.
Mix it a little bit with the rice.
Nice, hot.
Bone marrow and rice.
Mm.
Oh, my gosh.
It's the best bone marrow ever.
So much.
Mm.
I can't miss that plate.
Hey.
Thank you.
You're welcome.
Thanks, guys.
My friend, you're the best.
Thank you.
You're welcome.
You cooked too much.
Hey.
Thank you so much.
Okay.
Thank you so much.
I washed this hand already.
Don't worry.
Next time I stay longer.
Inshallah.
Thanks, guys.
Woo.
Thanks, guys.
Chokran.
Okay.
Ready?
Airport?
Ready.
Literally bored in 40 minutes.
We made it happen.
Okay.
Now, this is the end of the trip.
Yeah.
Now, I don't like to say goodbye.
Me either.
I like to say see you soon, my friend.
See you soon.
So, that was like a mountainous dinner here right outside of the airport in Salalah.
What an experience.
They cooked up like four different dishes.
Everything was fantastic.
But the white kabsa with camel.
Absolutely amazing.
It was like the most delicious camel of my life.
Boiled then fried.
Yeah.
Camel meat.
