Today I cook a massive côte de bœuf — a heavy, bone-in beef cut — the old French way, deep in the ground, with fire, smoke, and time.
What you’ll experience:
In rural France, I place this huge piece of meat into a deep earth oven, surrounded by heat and smoke, and leave it there for hours.
No kitchen. No shortcuts. Just fire, earth, and patience.
At first — smoke.
The meat slowly takes in the fire, absorbing the smell of wood and heat.

Fat begins to melt, fibers soften, and the structure breaks down from within.
After hours in the earth, it comes out alive —and is finished with hot butter and rosemary, adding the final layer of flavor and aroma.
