Crispy Roast Pork without Boiling or Skin Piercing

1kg pork belly
1 tablespoon white wine (10g)
½ teaspoon salt (5g)
1 tablespoon white vinegar (10g)
1 tablespoon cooking oil or lard (10g)
Marinating ingredients: 1 tablespoon fried shallots and garlic
1 teaspoon five-spice barbecue marinade (7g)
1 teaspoon soy sauce (5g) ½ teaspoon beef powder or curry powder (1g) ½ teaspoon five-spice powder (1g) ½ teaspoon MSG (2g) ¼ teaspoon salt (1g) ¼ teaspoon pepper (1g) ¼ tablespoon chopped shallots and garlic
Marinate overnight: Remove and brush with vinegar.
Cook at 120°C for 30-35 minutes, then remove, brush with cooking oil, and bake again at 200°C for 30-35 minutes.
