For the fried ginger
2 tbsp sesame oil
2 tbsp cooking oil
40g (1.4 oz) young ginger, peeled and julienned

For the fried eggs
4 medium-large eggs

Main Ingredients
180g (6.3 oz) minced meat (pork or chicken)
4 garlic cloves, finely chopped
4 spring onions (scallions), cut into 5cm (2-inch) lengths
A few dashes of ground white pepper
150ml (5.3 fl oz) Shaoxing Huatiao wine (Chinese cooking wine)
150ml (5.3 fl oz) water
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tsp sugar
½ tbsp premium dark soy sauce
A little cornflour slurry (cornstarch mixed with a splash of cold water)
2 tbsp sesame oil (for the final flourish)
