Steamed Banana Cake - Soft and chewy all day long, with a crunchy texture. INGREDIENTS: 800g Siamese bananas, 80g granulated sugar, a little water. NOTE: Simmer bananas for 5 minutes over medium heat. Cut ½ banana into strips and ½ banana into thin round slices. 300g tapioca starch, 3 tablespoons rice flour (30g), 1 cup warm water (250ml) or boiling water. Scoop out 1 tablespoon of flour mixture (20g), 1 cup water (250ml). NOTE: Stir the batter for about 5 minutes, steam the cake over medium heat. Steam the last layer for 15 minutes. During steaming, release the steam once every 15 minutes. COCONUT MILK RECIPE: 2 tablespoons sugar (30g), 1 tablespoon tapioca starch (12g), 1/2 tablespoon rice flour (6g), 1/4 teaspoon salt (1g), 400ml coconut milk (400g).
