We go to great lengths to source high-quality teas, and it’s essential to prepare them properly to bring out their full flavour.

Start by warming the teapot with hot water. This prevents the cold pot from lowering the temperature of the water when brewing, ensuring the tea infuses correctly. Swirl the hot water around the pot, then discard it.

Next, measure your loose tea. Tea should always be stored in an airtight container, away from moisture, to preserve freshness and flavour. The traditional guideline is one teaspoon of tea per person, plus one extra teaspoon for the pot. For example, when making tea for two people, use three teaspoons.

Fresh water is crucial. Always use newly drawn water rather than water that has been previously boiled, as reboiled water loses oxygen and can result in a flat-tasting tea. If possible, use filtered water to remove impurities that may affect the flavour.

Bring the water to a rolling boil (100°C). Avoid over-boiling, as this also reduces oxygen content. Once the water reaches a proper boil, remove it from the heat immediately and pour it directly over the tea. Cover the teapot with a tea cosy to maintain the optimal temperature during brewing.

Although the colour develops quickly, flavour takes longer to fully infuse. Allow loose tea to brew for at least five minutes to achieve the best taste.

After brewing, stir the tea gently before pouring. Serve as preferred — black, or with milk, lemon, or sugar.

This is the proper method for preparing the perfect cup of loose-leaf tea.
