Chickpea soup:
Thawed vegan chorizo (you can find the recipe on my channel)
Bake at 180°C for about 25–30 minutes
Olive Oil
1 Onion
1 Carrot
1 Parsnip
3 Bay Leaves
4 Pimento
Juice from roasted Peppers
2 roasted pickled Peppers
1/2 Swede
1 Potato
1 Tsp Ancho Flakes
1 Tsp Cumin
1 Tsp Smoked Paprika
1 Tsp Turmeric
1 Tsp Ground Coriander
50 ml Tomato Puree
1 can of chickpeas – keep the liquid, we’ll use it later
1 Tsp dried Coriander leaves
1 Tsp Thyme
Water
cover and simmer gently until the potatoes are soft, about 20 minutes
1 Tsp Tapioca
add the liquid once the vegetables are soft
bring to a gentle simmer
