📌Ingredients:
For the dough
1½ cups lukewarm water
1 tbsp honey/2 tsp sugar
1 tbsp active dry yeast
3¼ cups whole wheat flour
2 tbsp olive oil (or oil of choice) + 1 tsp for spreading over the dough
1 tsp salt

For the filling
300 g boneless chicken
3/4 tsp paprika or chili powder
1/2 tsp salt or as per taste
-1/2 tsp Italian seasoning/oregano
1/2 tsp garlic powder
1/2 tsp onion powder
-1/4 tsp ground pepper
1½ cup chopped bell peppers – mixed colors
1½ cup grated mozzarella cheese
1/2 cup pizza sauce/tomato ketchup
2 tbsp oil
Kitchen twine (for shaping the buns)
Milk for brushing

📌Instructions:
In a bowl, mix together lukewarm water, active dry yeast, and honey. Rest for 10 minutes or until the yeast becomes active
In a separate bowl, mix whole wheat flour and salt
Add olive oil and the flour mixture into the foamy yeast mixture
Knead for 15 to 18 minutes until the dough becomes soft. You can knead by hand or use a hand mixer/stand mixer with a dough hook attachment
Tuck the dough into a smooth ball before placing it back in the bowl
Spread a little oil over the dough to prevent drying while proofing
Proof the dough for 2 hours or until it doubles in size
In a bowl, add cubed boneless chicken, salt, paprika, Italian seasoning, garlic powder, onion powder, ground pepper, and oil
Combine well and marinate the chicken for 30 minutes
Cook the marinated chicken in a pan over low to medium heat
Cover and cook until chicken is cooked through
Once cooked, stir-fry the chicken until lightly golden. Adjust salt at this stage if needed
Once the dough is proofed, divide it into 8 equal portions
Flatten each portion using a rolling pin. Dust with flour if needed
Spread pizza sauce or ketchup and layer chicken and chopped bell peppers
Add a generous amount of grated mozzarella cheese
Shape the dough into a ball (as shown in the video) and tie it with kitchen twine to form pumpkins
Brush some milk over the buns
Bake at 350°F for 25 to 30 minutes
