
Clear Beef & Daikon Soup (Fall-Apart Tender!)

● Ingredients:
• 900g boneless beef rib (or any beef you like)
• 800g white radish
• 20g ginger
• 150g onion
• A few green onions (optional)
● Blanch the Beef:
• Put beef in a pot with cold water, 10g ginger, and 1 tbsp rice wine.
• Turn to high heat, bring to a boil, and skim off the foam.
• Remove beef, rinse with hot water, and pat dry.
● Blanch the Radish:
• Bring water to a boil.
• Add radish for about 2 minutes to remove any harsh bite.
● Make the Stew:
• Medium heat: add oil, beef, and 10g ginger. Sear until slightly browned all around.
• Add 1 tbsp rice wine and stir to release aroma.
• Pour in 1 liter of hot water—just enough to cover the beef.
• Add onion, 1 star anise, and 5 bay leaves.
• Simmer on low heat for 90 minutes (or 25 minutes in a pressure cooker, then finish in the pan).
• Remove the aromatics.
• Add radish, 1 tsp salt (adjust to taste), and ¼ tsp white pepper.
• Medium heat, cover, and simmer 15 minutes.
• Sprinkle with green onions and serve.
💡 Tip: 1 tsp = 5ml, 1 tbsp = 15ml
