For the rice
1 cup rice, dry
For the shredded tofu
14 oz tofu, firm
3 tbsp tamari sauce
For the sauce
2 garlic cloves
6 tbsp peanut butter, unsweetened
2 tbsp rice vinegar
2 tbsp tamari sauce
2 tbsp maple syrup
1 tbsp sambal oelek
1 tsp sesame oil
1 tsp ginger, ground
For the toppings
1 cup green cabbage
1/2 cucumber
12 radishes
1/2 cup fresh cilantro

For the potatoes
2 lb yellow potatoes
For the cheesy sauce
1/2 cup cashew nuts, raw
1/2 cup plant milk, unsweetened
4 tbsp nutritional yeast
1/2 tbsp lemon juice
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp turmeric, ground

3/4 cup walnuts, raw
