Ingredients
Coffee sponge sheet cake:
6 egg yolks, at room temperature
30 grams sugar
1 tsp vanilla extract
60 grams vegetable oil
60 grams milk, at room temperature
1 tbsp Nescafe gold
70 grams cake flour
30 grams cornstarch
A pinch of salt
6 egg whites, at room temperature
1/8 tsp cream of tartar
90 grams sugar
✨Preheat your oven to 175° C / 350° F
✨line 35x45 cm sheet pan with baking parchment.
✨Bake in preheated oven for about 25 minutes.
Coffee cream for filling:
250 grams whipped cream (sweetened)
150 grams unsalted cream cheese or mascarpone
2 tbsp powdered sugar
1 tbsp Nescafe gold
1/2 tbsp boiling water
1/2 tsp vanilla extract
Coffee ganache
50 grams white chocolate
50 grams hot cream 33%
1/2 tbsp Nescafe gold
