Hi, welcome to CookStacyCook. Today, I would like to share my walnut shrimp recipe with you.
Walnut shrimp is a dish people love to order at Chinese restaurants. In this episode,
I will show you how to put this dish together
so you can make it at home for less than half of the price you pay at the restaurant. Let's get started.
We will start by preparing the shrimp. I am using previously frozen shrimp here.
Remove the shell and rinse the shrimp a few times with cold water, then pat them dry.
Season them with salt,
sugar,
and white pepper powder.
Then cover them and let them season for 15 minutes.
I usually put them in the fridge to keep them nice and fresh.
After 15 minutes, we will coat them with cornstarch.
Evenly coat the entire shrimp with cornstarch and gently shake off the excess cornstarch.
Then let the shrimp rest for 10 to 15 minutes.
We are allowing time for the moisture from the shrimp to incorporate with the cornstarch.
This will prevent the cornstarch from falling off when we deep-fry the shrimp.
Five minutes before the shrimp is done resting,
we can start to heat up some oil to deep-fry the shrimp. You can use any regular cooking oil for this.
Heat up the oil to
380 degrees Fahrenheit or
195 degrees Celsius.
When the oil gets up to temperature, the shrimp should be done resting.
Gently drop the shrimp into the oil one by one. Make sure you don't overcrowd the pot.
Deep-fry in multiple batches if you have to.
We will deep-fry the shrimp for two minutes.
Don't touch them for the first minute. As you can see here, the oil temperature has dropped to
330 degrees Fahrenheit. This is normal.
After the first minute, you can gently stir the shrimp and break up those that are sticking together.
When the two-minute time is up, remove the shrimp from the oil.
Let them rest and cool down for at least 15 minutes. Then we will deep-fry them again for 20 seconds.
Because I am using a small pot here,
I am deep-frying my shrimp in two batches.
If you are frying in batches too, remember to heat up the oil back to
380 degrees Fahrenheit before you put the shrimp in the oil.
Just repeat the steps we did for the first batch.
When you make this dish at home, you can do this first frying ahead of time.
And when it's about time to serve the dish, you can do the second frying.
Mix in the dressing and put the dish together in just a few minutes.
Before we do the second frying, we need to prepare the dressing. Mix mayonnaise,
honey,
condensed milk,
and lemon juice together to make this dressing.
If you are preparing this dressing ahead of time, make sure you keep it in the fridge.
Okay, I have let the shrimp rest for 15 to 20 minutes after the first frying.
We are now ready to do the second frying.
We need the oil temperature at 400 degrees Fahrenheit or 200 degrees Celsius.
And we will fry the shrimp for 20 seconds.
Once we put the shrimp in the oil, the oil temperature will drop by about 20 degrees Fahrenheit.
Make sure you fry for only about 20 seconds, then remove it from the oil.
The shrimp is very crispy now.
Let the shrimp cool down a little bit so they are not steaming hot. And we are ready to mix in the dressing.
Pour the dressing onto the shrimp and stir to mix them up.
Then add some sugar glazed walnut and you are ready to serve.
You can use store-bought honey glazed walnut for this or you can serve this dish without the walnut. It's equally delicious.
Look at the shrimp. They are crispy and have a nice balance of savory and sweetness.
The walnuts are light and crunchy and coated with a crispy and sweet glaze.
Together they just taste so good. I have never have any leftover whenever I make this dish.
Now if you want to see how I make my sugar glazed walnut, keep on watching.
In a cold pan, add raw walnut,
sugar,
salt,
oil,
and water.
It looks like we use a lot of oil here.
But don't worry. The oil will be left in the pan at the end.
Give them a little stir to combine them together. Now slowly heat them up over medium low heat.
The whole process takes about 20 minutes and we will keep the heat at medium low the whole time.
For the first five minutes, there is not much going on. All you have to do is stir them occasionally.
We will see the liquid starts to boil by about six to eight minutes.
Keep stirring them occasionally and make sure to turn the walnuts over so they are cooked evenly.
As the liquid cooks down, you will see more and more bubbles forming in the liquid.
But as we cook the liquid down even further, bubbles will start to decrease.
As you see fewer bubbles, you have to increase your stirring frequency.
By about 16 minutes, the sugar will start to caramelize and you will feel the liquid is sticky.
By about 20 minutes, the walnut should be done.
You can test it by dipping a piece of walnut in cold water and taste it to see if it's ready.
The total cooking time will vary a little bit depending on the amount of walnut you are making.
A quick note here. The amount of sugar glazed walnut I am making here is enough for two plates
of walnut shrimp. I am making a little extra because everyone in my family likes to snack
on these walnuts. When the walnut is done, remove them from the pan and let them cool down.
Make sure you separate them so they are not touching each other while they are hot.
The color of the walnut will continue to get a little darker as they cool down.
Once the walnut have cooled down, they are ready for use in the walnut shrimp dish.
