Hi everybody. Welcome back. It's gonna be a beautiful chilly day today. Perfect weather
for a hot chili stew with ground beef and potatoes. That's what I'm going to be fixing today
and I'm going to show you how to make it step by step. Very easy. Now this is one of my favorite
stews to prepare because it's hearty and I love all the ingredients that go in it.
My Ron absolutely loves it too. Now I'm going to be using this big pot right here and I've got my
heat set on about medium and I'm going to add one and a half pounds of ground beef. This is 85-15.
Now I like to use 85-15 with just a little bit of fat in it because that's what gives this stew
a delicious flavor. After I brown it really well I'm going to remove the excess grease because you
don't want your stew to be very greasy. Now I'm going to break it up a little bit but I do like
you know nice chunks of ground beef in here and it will be releasing some of its grease
that's why you want to make sure that that you remove the excess. And while I brown my ground
beef I'm going to chop up my anaheim peppers. I'm going to be using seven of them and here they are.
Now I always have a lot of anaheim peppers, poblano peppers in the freezer ready to go. I'm
going to be using seven anaheim peppers. See these are the anaheim peppers right here and they're
nice and mild. Perfect even a child can eat these. Now if you want to use hatch chili peppers you can
use those there's nothing wrong with that. Now if you can't find any in your grocery store most
grocery stores have them but if you can't find any you can use you know canned chilies there's
nothing wrong with that. Now I like to chop them up not too small not too big but I want to be able
to see them in the stew. Now I always remove the seeds and then I roast them and then just remove
the charred skin from outside. I will put a link below so you can see how I do that the easy way
and I'm going to cut them all up just the same. Now I'm going to set them right here on this plate
so they'll be ready to go when I need them. So my ground beef is nice and brown and I have removed
the excess grease. Now I'm going to add my onions. I have one medium onion here that I've chopped
and I'm going to add it all in here but you can add as much as you want.
And I'm going to add three large garlic cloves finely minced they were like the size of my thumb.
I do like a lot of garlic in this dish because it needs it for the flavor. You want that flavor
to really come out. Now I'm just going to toss it together so the onions get slightly translucent.
I want them to release their flavor in here. You want to take it step by step very easy.
Now along with the onions and the garlic I'm going to add one large jalapeno
that I've diced nice and small. Now these anaheim peppers don't have any heat at all
that's why I'm adding the jalapeno but you can leave it out if you don't want any heat in here
or if you want more heat you can add serrano peppers and that'll give you nice heat. A little
cayenne is fine also. Now I want everything going in at the same time. I'm going to add two
teaspoons of freshly ground cumin. Two teaspoons because this stew needs it. It'll just be perfect
and I'm going to add one and a half teaspoons of paprika. Oh this will give it a beautiful
color and flavor. I'm going to add some pepper and now some salt. You can add as much as you
want to the salt. Now you want to be adding some and tasting it as you go along so you don't overdo
it. You can always add some more but you can't take it out if you overdo it. See I'm just going
to toss it together and let all those flavors come in together beautifully. So my onions are
slightly translucent. Now I'm going to add my tomatoes. I have two medium large tomatoes that
I have diced. See now you can use canned tomatoes if you want to do that and I'm also going to add
three potatoes that I have diced small you know bite-sized pieces like this. These are gold
potatoes. I'm going to add them in here and now I'm going to add my anaheim peppers. These are so
mild and delicious and now I'm going to add my beef broth. This is six cups and I made it with
better than bouillon beef flavor. Beautiful and I'm also going to add a little cilantro.
Now you can leave the cilantro out if you don't like it but not only does it look pretty in the
stew but the flavor together with all the other ingredients. That's good right here and add it all
in here and now I'm going to stir it all together. Now I've got my heat set on high I'm going to
bring it up to a boil and then I'm going to lower the temperature to a low heat. I'm going to replace
the lid and I'm going to wait for it to come up to a boil. So my stew has just come up to a rolling
boil. Now I'm going to lower the temperature all the way down to low. I'm going to replace the lid
and I'm going to set the timer for 25 to 30 minutes because I want to give all the ingredients
enough time to come in together beautifully because you want it to taste delicious. So I'll
see you in just a little bit. So my time is up 25 minutes. Now I'm going to turn off the heat
and I'm going to add the last ingredient. Two cups of pinto beans. I had these in the freezer
and I took them out last night and they're nice and thawed and I'm going to add them in here.
Beans are optional. If you don't want to put any beans in here you can leave them out
and you can use your favorite beans. Kidney beans, black beans,
canned pinto beans, whichever you like.
Now with the heat off I'm going to replace the lid and I'm going to give them five minutes
so that the beans can get nice and warm along with the stew. I'm going to clean up this area
because we're going to be ready to serve. Oh this smells delicious.
Beautiful. Look at this. Now I'm going to be serving this delicious green chili stew
with some tostadas. These are corn tortillas. I just rubbed them with a little bit of olive oil.
I sprinkled a little salt and pepper and paprika. When they got nice and toasty I added a big
handful of cheese and then let it melt and here they are. You can serve this with corn tortillas,
flour tortillas, whatever you like. Even cornbread is delicious. Yum. Now it's time for the taste test.
Oh man. So good. Oh my goodness. This is heavenly delicious. My Ron is gonna flip over this.
