
The BEST Thanksgiving Mac & Cheese (Golden, Cheesy, Baked)

🍴 INGREDIENTS:
- 3 cups water (for boiling)
- 1 teaspoon salt
- 1 ½ cups elbow macaroni (cook al dente)
- ¼ cup margarine or butter
- ¼ teaspoon nutmeg
- 2 tablespoons heavy cream
- ½ cup milk (add more as needed)
- ¼ teaspoon Mrs. Dash (or seasoning blend)
- ½ teaspoon dried parsley
- ½ cup freshly grated Parmesan cheese
- ½ cup grated Asiago cheese
- ½ cup grated mozzarella (for topping)
- Extra Parmesan (store-bought, powdered or grated)
👩🍳 INSTRUCTIONS:
1️⃣ Boil the Pasta
Bring 3 cups of water to a boil, add 1 teaspoon of salt, then stir in 1 ½ cups of elbow macaroni. Cook al dente (firm but tender).
2️⃣ Prepare the Cheeses
Cut your block cheeses into small pieces. Grate your Parmesan and Asiago cheese — about ½ cup of each. Mix them together in a bowl.
3️⃣ Make the Creamy Sauce
In a pan, melt ¼ cup margarine. Add ¼ teaspoon nutmeg, 2 tablespoons heavy cream, and ½ cup milk. Stir until smooth and creamy.
Mix in ¼ teaspoon Mrs. Dash and let the mixture blend evenly.
4️⃣ Add the Cheeses
Stir in your grated cheeses, mixing constantly until the sauce becomes smooth and creamy. Add ½ teaspoon parsley for extra flavor. If it thickens too much, add a splash more milk.
5️⃣ Combine Pasta & Sauce
Add the cooked macaroni into the cheesy mixture and stir well until every noodle is coated.
6️⃣ Fill the Ramekins
Spoon your creamy mac & cheese into buttered ramekins. Sprinkle the tops with a little store-bought Parmesan and shredded mozzarella.
7️⃣ Bake to Perfection
Place ramekins on a baking sheet and bake at 350°F (175°C) for 20–25 minutes, or until golden and bubbly.
8️⃣ Serve & Enjoy!
