I made these easy gooey & sticky homemade cinnamon rolls (2 ways) and they came out amazing. One is soft and creamy, the other is warm, sticky, and full of flavor. If you love a good homemade cinnamon roll, you’re gonna enjoy both of these.

📝 INGREDIENTS
Dough:
- 4 cups all-purpose flour
- 1 teaspoon table salt
- 1 ¾ cups warm milk (110°F)
- 5 tablespoons melted butter
- 1 large room-temperature egg
- 2 teaspoons vanilla extract
- 1/3 cup granulated sugar
- 2 packets instant yeast

Sticky Pecan Filling:
- 2 tablespoons butter
- 1/3 cup brown sugar
- 1/4 cup half-and-half
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Handful of whole pecans
- 1/4 teaspoon bourbon (optional)

Regular Cinnamon Filling:
- 5–6 tablespoons soft butter
- Brown sugar (enough to fully cover dough)
- Ground cinnamon (generous)

Icing:
- 4 tablespoons unsalted butter (softened)
- 2 cups confectioners sugar
- 1 teaspoon vanilla extract
- 1 teaspoon vanilla powder
- 2–3 tablespoons half-and-half

👩🏽‍🍳 INSTRUCTIONS
1. Make the Dough:
- Mix flour + salt.
- In another bowl: warm milk, butter, egg, vanilla, sugar, and yeast.
- Let yeast sit briefly.
- Combine with flour, mix into a sticky dough.
- Knead on floured board until smooth.
- Place back in bowl, cover, rise for 1 hour.

2. Sticky Pecan Filling:
- Melt butter on low heat.
- Add brown sugar and melt it down.
- Add half-and-half and whisk smooth.
- Add vanilla + cinnamon.
- Add pecans and candy them lightly.
- Add bourbon if using.
- Pour into a greased pan and spread evenly.

3. Icing:
- Beat butter and half the sugar.
- Add remaining sugar.
- Add vanilla extract, vanilla powder, and half-and-half until creamy.

4. Roll & Fill Dough:
- Roll dough to about 1/4 inch thick.
- Brush with soft butter.
- Add brown sugar edge to edge.
- Add cinnamon generously.
- Roll tightly, cut ends, and slice into rolls.

5. Prepare Both Versions:
- Sticky Rolls: Dip slices in butter → cinnamon sugar → place on pecan mixture.
- Regular Rolls: Arrange in another pan and sprinkle a little extra sugar on top.
- Cover both pans and let rise again.

6. Bake:
- Bake both trays at 350°F for about 30 minutes.
- Check at 15–20 minutes depending on your oven.

7. Finish:
- Flip sticky buns out of the pan.
- Add icing to the regular cinnamon rolls while warm.
- Slice, enjoy, and serve!
