In this video I share a salad recipe which is ideal for meal prep to enjoy for your dinner or lunch .It is made with plant-based ingredients which is also ideal for those aiming for weight loss. It is healthy delicious and packed with nutrients our body needs to keep us healthy and happy.

Ingredients
1 medium sweet potato
100 grams tofu
2 tsp smoked paprika
1/2 tsp onion powder
1 tsp garlic powder
salt & pepper
A drizzle of olive oil
& bake in a preheated oven at 392°F/200°C for 30 minutes
Baking time may vary depending on your oven

Salad dressing
2 Tbsp olive oil
1 Tbsp apple cider vinegar
2 tsp agave syrup (or any sweetener)
2 tsp mustard
salt & pepper

In a mixing bowl add in 1 cup cooked quinoa
Some diced cucumber, tomatoes, red onions & avocadoes
Add in the sweet potatoes & tofu
Mix in salad dressing
i added some pomegranate seeds and fresh dill
