For the Sour Cream Pie Crust
* 1 cup (5 oz/142 g) all-purpose flour
* ½ teaspoon salt
* ½ cup (4 oz/115 g) butter , cold and diced
* ¼ cup (2 oz/57 g) full fat sour cream
* 1 egg + 1 tbsp water (for egg wash)

For the Caramel Pecan Filling
* ½ cup (115 g) granulated sugar
* 2 tbsp water
* 6 tbsp (85 g) unsalted butter, diced
* ¼ cup (60 ml) heavy cream, warmed
* ½ cup (115 g) dark brown sugar
* 3 large eggs, at room temperature
* 1 tsp vanilla extract
* ½ tsp salt
* 1¼ cups (177 g) pecans, roughly chopped
