Soft cinnamon sugar cookies with a cheesecake filling :)

This recipe makes 14 cookies (using a 2 tbsp cookie scoop). You can make these cookies smaller (thumbprint cookie size) if you wish :)

Cinnamon Sugar Cookies
1/2 cup (113g) softened butter (salted)
1 cup (220g) light brown sugar
2 eggs
2 tsp vanilla extract
2 and 1/2 cups (313g) all-purpose flour
1/4 tsp baking soda
1/4 tsp cinnamon

Cinnamon Sugar
1/4 cup (50g) sugar
2 tsp cinnamon

Cheesecake Mixture
4oz softened cream cheese
1/4 cup (50g) sugar
1/2 tsp vanilla extract
2 tbsp sour cream

♡ Bake at 325F (163C) for 10-12 minute
