🥕Carrot cake recipe with cream cheese frosting
Cake ingredients:
3 eggs
100g granulated sugar
50g brown sugar
200g grated carrots
150ml oil
100m milk
70g walnuts or pecans chopped up
70g chocolate chips or chunks
250g flour
16g baking powder (1tbsp)
1 tsp cinnamon
1 tsp vanilla
Cheese frosting
120g cream cheese room temp
30g room temp butter
70g icing sugar
Preheat the oven to 175°C (350°F) and prepare the cake pan by greasing it lightly or lining it with baking paper.
In a large bowl, whisk together the eggs, white sugar, and brown sugar until the mixture becomes smooth and slightly pale. Add the oil, milk, and vanilla, and mix until well combined.
In another bowl, sift the flour, baking powder, and cinnamon. Add the chocolate chips to this dry mixture and toss them gently so they’re coated with flour — this helps keep them evenly spread in the cake.
Add the dry mixture to the wet ingredients and stir gently until everything is just combined. Then fold in the grated carrots and chopped nuts until evenly distributed.
Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean (around 35-45 mins). Let the cake cool completely before adding the frosting.
Cream Cheese Frosting:
Beat the cream cheese and butter together until smooth and creamy. Add icing sugar and mix until the frosting is soft, fluffy, and easy to spread.
Spread the frosting evenly over the cooled cake. You can decorate the top with chopped nuts, or sprinkle of cinnamon.
