Bonjour, friends! Today I will show you how to make a true French cake. This isn't just a recipe,
it's a symphony of textures. The result is light, refined, and unbelievably delicate.
Step 1. Cream Mousseline. Whisk together eggs, sugar,
corn scratch, or all-purpose flour. Mix until smooth.
Now gradually add the milk, a little at a time, stirring continuously.
Cook the mixture over medium heat, stirring constantly until it thickens.
Once thickened, remove from heat. Transfer to a bowl and cover with plastic wrap.
Let it cool to room temperature.
Preparing the Choux Pastry. In a saucepan combine butter, water, a pinch of salt.
Bring the mixture to a boil.
Once it starts boiling, add the flour. Stir thoroughly until the dough is smooth
and comes together in a ball. Transfer to a mixing bowl. Let it cool slightly
to about 120-140 degrees F. Beat in 3-4 eggs.
Add one at a time, mixing well after each addition.
The dough should slowly fall from the spatula, forming a ribbon or tongue.
Using flour and pastry ring, shape a circle on your baking sheet.
Pipe the dough inside the circle with a pastry bag to form a lattice-like disc.
During baking, the pastry will puff up.
Bake in a preheated oven for 8-12 minutes until golden brown.
Bake 5 of these lattice-style layers. Step 2. Finishing the Cream Mousseline.
Beat the butter until pale and fluffy, about 3-5 minutes.
Add vanilla and mix well. Then gradually add the cooled custard in small portions.
Mix until perfectly smooth and creamy.
Assembling the cake.
Melt white chocolate in the microwave or over a double boiler. Stir until smooth.
Brush or drizzle each choux layer with melted white chocolate.
Spread a layer of cream mousseline on top of each.
Decorate the top layer as desired.
Chill the assembled cake in the refrigerator for a few hours.
Coat the sides with the remaining cream mousseline or whipped cream.
Sprinkle with toasted almond flakes.
And there you have it! Perfection in every layer!
Airy choux pastry, silky cream mousseline, the fragrance of vanilla and white chocolate
tying it all together in delicate harmony.
