🍎🍂Baked Apples with Ricotta and Cinnamon Crumble Recipe
Ingredients
• 4 tart apples (Jonagold or Bramley, about 200 g each)
• 20 g walnuts, finely chopped
• 30 g plain flour
• 55 g light brown sugar (divided)
• 20 g raisins
• ½ tsp ground cinnamon
• 150 g ricotta cheese (softened)
• 1 egg yolk
• Seeds from ½ vanilla pod (or ½ tsp vanilla extract)

Instructions
1. Preheat the oven to 180°C (350°F).
Using a spoon, carefully remove the cores from the apples, creating a hollow about 1 cm thick.
Arrange the apples in an ovenproof dish and set aside.
2. Make the crumble topping:
In a bowl, combine the chopped walnuts, flour, 25 g of brown sugar, raisins, and ¼ tsp cinnamon.
Rub the mixture gently with your fingers until it forms small crumbs. Set aside.
3. Prepare the creamy filling:
In a separate bowl, mix the ricotta, egg yolk, remaining 30 g of brown sugar, ¼ tsp cinnamon, and vanilla until smooth and creamy.
4. Assemble the apples:
Spoon the ricotta filling into each hollowed apple.
Sprinkle about three-quarters of the crumble topping over each one.
5. Bake for about 35 minutes, until the apples are tender and the crumble is golden.
6. Serve warm, topped with the remaining crumble and a drizzle of honey or maple syrup if you wish. 🍯
