The best recipe you've never heard of is...Romanian lettuce soup! When Chris Kimball told us this was one of the best recipes he tried in Bucharest, we expressed skepticism because...hot lettuce. But, like most of the best recipes we'd never heard of, we were delightedly surprised.
At the bistro Bacania Veque, in Bucharest, chef Marius Tudosiei built the base by sautéing smoked bacon (he also used lardo), then added scallions and garlic along with dill and parsley. Equal parts milk and water built the broth; then some Greek style yogurt (tempered with some of the hot liquid); then a massive quantity of lettuce leaves added at the very end. He finished with strips of an herb omelet.
We can confidently say we have never made a soup like it, but it has everything we love in a crisp-weather soup—a bowl that balances hearty richness with clean, green flavor.
