
Easy Chinese Vegetable Soup with Zucchini (and a "Secret" Seasoning)
Chinese Vegetable Soup with Zucchini is so easy, ready in minutes. Zucchini is so refreshing, although it doesn't have much flavor. I use Matsutake seasoning (or regular mushroom seasoning) to make the soup flavorful along with onions, carrot and mushrooms. Enjoy!

Ingredients:
1/2 zucchini, sliced thinly
1/4 of an onion, sliced
1/2 of a carrot, sliced
3 Bella or other mushrooms, sliced
2 cloves garlic, minced
3 cups hot water or vegetable stock
Matsutake seasoning (or regular mushroom seasoning)
salt
white pepper
sesame oil
avocado or vegetable oil
Written recipe for Summer Rolls:
1. Heat up 1 tbsp oil on medium heat, and sauté the onion for about 10 seconds.
2. Add carrot and mushrooms, and stir together. Mix with minced garlic.
3. Add hot water or stock, and bring it to boil
4. When it boils, add zucchini. Cook about 8 minutes.
5. Add a bit salt and white pepper powder. Finish with sesame oil. Serve!
