A wonderfully airy dough with almonds, refined with a fresh apple and lemon cream and a hint of rum. A true piece of Austrian baking tradition that can still be enjoyed today.

📋 INGREDIENTS:
For the dough:
• 250 g (1 cup) clarified butter (clarified butter)
• 250 g (1 ¼ cups) sugar
• 250 g (2 cups) flour, sifted
• 70 g (½ cup) finely ground almonds
• Peel of 1 lemon
• 10 eggs (yolks and egg whites separated)

For the apple cream:
• 3–4 sour apples
• 2 heaped tablespoons of sugar
• Juice of 1 lemon
• 2 tbsp butter
• 3 egg yolks
• 1 glass of arak or rum

For the icing:
• 150 g (1 ¼ cups) powdered sugar
• 3–4 tablespoons of water
