Autumn has quietly arrived, and once again, it’s the season for enjoying mushrooms.
Eating matsutake has become a yearly ritual, and this time I paired it with crown daisy to make a fragrant matsutake rice dish.
I have to say, the combination is perfect—the earthy aroma of matsutake blends with the fresh fragrance of crown daisy, wrapping around the rice beautifully.
Matsutake & Crown Daisy Rice
1.5 cups rice
1 small bunch crown daisy
6 matsutake mushrooms
Half a small carrot
2 pieces kelp (6×12 cm each)
1 tsp soy sauce
A pinch of rose salt (or sea salt)
Date & Pistachio Chocolate Bars
100 g dark chocolate
6 dates
40 g breadcrumbs
80 g pistachio paste
Crushed pistachios (as needed)
1 tbsp maple syrup
