Smoked boneless/skinless chicken thighs on the Pit Boss Austin XL. The chicken was marinated for 3 hours in Italian salad dressing. The rub used was Suckle Busters Clucker Dust. Smoked at 250 until an IT of 175. I let the chicken rest for 10 minutes, then it was time to eat!
