Hey guys, it's Ratan here. Welcome to my channel, The Dharo TV.
So many of you wanted me to show you how to make wine at home.
So today, I'll be showing you how to make red wine at home.
So let's get started.
So guys, what I've done is I've taken two kilos of black grapes.
I've washed it in warm water with salt and make sure to dry the grapes.
So right now, I'm picking out all the bad grapes which is like mashed or which is like bad.
We don't want to mix it with the good grapes to make this wine.
So I'm picking out all the bad grapes.
So once we separate the grapes, we'll be crushing it nicely.
So once we have crushed the grapes, we'll be transferring it to a container.
Here, I'm using a plastic container.
You guys can use any ceramic container or a glass container.
Make sure that you don't use a stainless steel because once it gets fermented,
it will actually react with the stainless steel.
So make sure that you use plastic, ceramic or else a glass container.
So here, I'm adding 50 grams of white rice and also 50 grams of wheat.
And here, I'm using one stick of cinnamon, two to three cardamoms and two to three cloves.
And for the color, I'm using beetroot juice.
It is just take a beetroot, blend it and pulse it and take out the juice and add it to the mix.
So here, I'm adding around 1.5 kilos of sugar.
So I actually like my wine sweet.
So I'm adding 1.5 kilos of sugar.
So if you want your wine to be a bit a little sweet, you can go for one kilo of sugar.
So mix it well and make sure that you use only wooden spoon.
You don't use any steel spoon or stainless steel spoon.
Here, I'm adding just one tablespoon of dry yeast.
So this is the yeast which we use it for bakery items.
And I make sure the water is boiled and cooled down to a room temperature.
And I'm adding 1.5 liters of water to this.
Mix it well.
Now, let's cover this with a cloth, any cloth would do.
Just tie it and keep this in a cool dry place for 15 days.
And every alternate days, make sure to just uncover it and stir it for every alternate days.
So make sure that you use only a wooden spoon.
Don't use any stainless steel spoon, just a wooden spoon.
Just cover it again and keep it in a cool dry place.
And for every alternate days, you do the same thing.
So after the 15th day, I'm just uncovering it and I'll be straining it to a container.
While straining, you actually get this nice sweetness of the wine.
You actually will like it.
So once that straining is done, I'll be bottling this wine.
And I'll be keeping it for another 6 days to ferment.
So this is called as a secondary fermentation.
So guys, it's been 21 days fermenting this red wine, 15 days in a container.
And the next 6 days, I have fermented this in a bottle.
So I'll try it and let you know how it tastes.
So let's get into the color.
So this actually doesn't have this dark red wine color.
It is like dark pinkish color, like something like a red rose kind of color.
So let's have a smell.
Yeah, nice.
So I actually get this fruity notes from this.
And also the spices that we added.
Like I'm getting a bit of cinnamon, not the cardamom.
I'm not getting the cloves.
But I'm getting a bit of cinnamon.
Yeah, nice.
So let's do the taste.
Nice.
It has this slight tanginess to this.
Yeah, this wine is on a sweeter side.
You can taste the spices that we have added right now.
On the taste, you can taste the cardamom and also the cinnamon.
But I'm not getting any hint of cloves.
And yeah, the berries, the fruitiness, the grape.
Yeah, this is lovely actually.
I'm liking it.
Nice, nice, nice.
And also the thing is, the alcohol content of this is somewhere around 12 to 15%.
And this actually gives you a good buzz.
That is lovely.
So I think the best food which can go good with this is chili pork.
If you guys love pork, I surely will tell you chili pork will surely go well with this.
Nice.
And also dry fish, which really goes well with this wine.
Like anchovy, dried anchovies, which you can make it a chutney like in a Mangalorean style.
It will really go well with this.
Coming to the dry fish, I came across this brand called as Phoenix Dry Fish, which is from Brahmavar.
And I visited their factory.
And the thing I liked about these guys is they are very hygienic.
And they don't use these old techniques to dry their fish like sun drying.
Basically, they actually pass it through a machine which actually dries the fish to the hot air thing.
So I have a few products through them they have sent to me.
So one is sole and one is the anchovies.
So the anchovies, as I told you, it actually really goes well with this wine.
The easiest way which we can eat these anchovies is just drop in hot oil,
fry it and just munch it like chips.
So guys, coming to the wine, this is really good.
You guys should try it and make sure that you ferment it for minimum of two months.
Because you will actually love it.
The flavor would enhance and the color also would enhance and it would be very good.
