Chicken breast - 400 gms (cut into thin flattish pieces)
For marination:
Salt-1/2 tsp
Pepper powder- 1/2 tsp
Egg White-1 egg
Cornflour/starch - 1 tbsp
Oil -1 tbsp
Sauces:
Dark Soy sauce-1 tsp
Oyster Sauce-2 tbsp
Green Chilli Sauce- 1 tsp
Water- 2-3 tbsp
Other Ingredients: :
Ginger juliennes: 2 tbsp (slices)
Green chillies, regular- 4 nos (spicy)
Green chillies, big - 2-3 (less spicy)
Oil for frying -4-5 tbsp
Preparation:
Cut the chicken breast fillets into thin flattish square pieces and marinate with the items specified. Mix and set aside for around 30 mins.
Peel and julienne the ginger.
Also slice the green chillies as shown in the video.
Process:
Take a wok and heat oil.
Now add the marinated chicken pieces and fry on medium to high heat for around 5-6 mins till cooked and light brown in colour.
Remove the chicken pieces onto a plate and also remove most of the oil leaving around 1.5 tbsp oil in the wok.
Now add back the fried chicken pieces.
Give a stir and then add the sauces and around 3 tbsp water.
Mix and then stir fry on high heat for around 2-3 mins till the sauce coats the pieces and the pieces are browned.
Lastly add the julienned ginger and green chillies, mix and stir fry for another 2 mins.
Serve hot as an appetizer.
