→ Cold brew
1 cup medium-coarse coffee grounds
4 cups filtered water
Soak for 12-18 hours then strain through a nut milk bag or paper filter.

1 cup oats
1 1/2 cups plant milk
1 tablespoon maple syrup or sweetener or choice
2-3 chopped medjool dates
1 tablespoon chia seeds
1/3 cup shredded unsweetened coconut
extras: vanilla extract, cinnamon, orange zest, chopped fruit
→Crispy Baked Chickpeas
3 cups chickpeas, rinsed (2 cans)
1 tablespoon olive oil
1 teaspoon salt
Dry chickpeas thoroughly with a clean kitchen towel. Toss with olive oil, salt, pepper and any other spices you like. Bake in a 400°F oven on a lined tray for 30-40 minutes. Give the tray a shake every 10 minutes to cook them evenly.

1/2 cup orange juice
1/4 cup soy sauce
juice of 1 lime
2 tablespoons apple cider vinegar
1 teaspoon ground cumin
1/2 teaspoon each ancho chili powder and chipotle chili powder
1 cup chopped cilantro
1 chopped jalapeño or serrano (remove seeds if you don't like spice)
1 tablespoon minced garlic
1 8 oz bag soy curls
Soak soy curls in just-boiled water for 10 minutes. Drain, allow to cool slightly and then wring out as much extra liquid as possible using a nut milk bag or clean towel.
Combine all marinade ingredients and pour over soy curls. Toss to coat and allow to marinade for 2 hours minimum, giving it a stir once or twice to ensure it's evenly coated.
Pan-fry marinated soy curls in a hot cast iron or nonstick skillet until slightly charred and enjoy.
