Alright, good morning.
So for breakfast today I'm having a matcha with some high fiber breads and boiled eggs
and then I just topped it with some arugula.
This is such a healthy breakfast but it does really taste good.
I never really thought boiled eggs would taste good but honestly this combo, especially
with the arugula, it just works.
So I didn't have a lot of time for lunch so I decided to just go with some easy sandwiches.
So I'm using this gluten free bread and it's processed, I'm just microwaving it and then
I just topped it with some vegan ham, cheese, more arugula, tomatoes and that's actually
it.
So I made quite a lot of those because I was really hungry.
Alright, and then for dinner I had this wrap with some vegan bites, I guess, and then some
fried potatoes, tomatoes, red onion and this homemade sour cream dressing.
Really yummy and then I just wrapped it up.
Alright, good morning.
I am obsessed with today's breakfast.
If you try one recipe from this video, try this.
I mean, it's not complicated at all.
It's literally an avocado toast but with cilantro and pumpkin seeds.
To be honest, I didn't like cilantro until I tried this.
During my LA trip, I tried this sandwich at the hotel breakfast.
It was like the best breakfast sandwich I've ever had.
So I'm just having that with a matcha again.
Also, I think what makes this sandwich so good is the bread.
I'm using a sourdough bread called Levain.
Alright, so for lunch, my dad picked up some pad thai.
So nice of him.
Pad thai is one of my favourite dishes ever and I actually haven't had it for a while.
I'm really excited to eat this and then I'm just having some oat milk.
I feel like oat milk just goes well with Thai food and this pad thai has tofu in it so it's
vegetarian.
So I just finished a workout at the gym so I felt like I kind of needed a bigger breakfast
tray but also something quick and easy because I really need to get started with my day.
So I ended up doing a bowl of greek yogurt, granola, and blueberries.
Really simple but so yummy.
And then also a plate of scrambled eggs, cooked spinach, and two toasts.
I feel like it's not the most glamorous breakfast but it's packed with protein which is perfect
after a workout.
Alright, so I just prepared tonight's dinner which is cannelloni.
This recipe is definitely one of my favourites because it feels like a very advanced meal
but it's so simple.
Literally takes 10 minutes to prepare and then 20 minutes in the oven.
I remember I used to make this like every single night for like pasta.
Like this is like heaven.
And then you can just serve it with some extra basil and a little salad on the side.
Today I'm having a really simple breakfast again but it's so good.
So I'm having the same thing as yesterday, some greek yogurt, granola, blueberries, and
then I drizzled some honey over it because I just felt like making it a little sweeter.
The blueberries are frozen so I usually wait like 15 minutes maybe before having it but
I didn't have time today and it's really giving me a brain freeze.
By the way, wait.
There you go.
Alright, for lunch I'm just having some leftover pasta from yesterday and then a little salad
with spinach and tomato.
Alright, so I'm currently editing and I wanted a little snack.
It's just matcha but I don't think I mentioned I actually make my matchas with a protein
soy milk.
So it's just a great source of some extra protein if you're a vegetarian.
How cute are these glasses by the way?
Little glass straws.
I'm gonna do some lightly fried vegan protein bites and I want to get these a little crispy
so I'm gonna dip them in some egg and then just normal all-purpose flour and then I'm
gonna serve it with some rice and some sort of sauce.
I haven't decided yet.
It smells like something you would get at a restaurant.
It smells so so good and it looks really really yummy.
Look how crispy it is also.
Okay no, I seriously think this is one of the best meals I've ever cooked.
Alright, happy Friday.
So for tonight's dinner I had some I guess potato and chickpea curry.
It's really really delicious with a lot of veggies like peppers, onions, carrots,
zucchini.
You could even serve it with rice if you wanted to.
I also had a glass of soy protein milk to just get some extra proteins in after the
gym.
Wait, did I even mention I was going to the gym?
I don't think I did but I went to the gym so I'm looking to get some extra proteins
in.
So I also made myself a little dessert but healthy.
So this is kefir.
Kefir?
I don't know how you say that but it's kind of like yogurt but it has a lot of probiotics
so it's like really good for your gut health.
I'm just having that with some frozen blueberries.
Um I actually think frozen blueberries were the best for this because it kind of makes
the yogurt a little like frozen.
I don't know if you can tell but it like creates bits of frozen yogurt and I think that's
really yummy.
