Hello and welcome to RUNCH.
If you think you can't make fresh pasta at home, I need you to think again.
Making pasta from scratch is actually very easy and surprisingly relaxing.
I can't really explain it but there's something magical about pasta making.
It requires just a few basic ingredients.
Flour, eggs and salt.
And this one, a little bit of spinach.
I choose to make it using a food processor.
And if you're gonna use a food processor as well, you'll see that the ingredients will
first turn into this sandy texture and then you'll see a ball forming, like this.
You can stop right here if you want to, but I prefer to keep on mixing until the spinach
is fully processed and the dough looks very pasty.
But you can instead mix everything in a bowl or on a surface with a fork, spoon or even
your beautiful hands.
If you do it by hand, the spinach has to be pureed aside and then added to the rest of
the ingredients.
Transfer into a floured surface and it's gonna be a bit of a sticky situation but don't worry,
we're gonna work around this.
Just keep on adding the flour and kneading until it looks like a proper pasta dough.
And trust me, there's no need to be shy with the flour, she's gonna be your best friend.
Don't forget that the spinach has a lot of water that was released during the processing
part.
You're gonna knead this for about 5 to 10 minutes or until it no longer sticks.
Have in mind that kneading isn't just about technique, it's also about patience.
Don't lose hope, it's gonna work out and you'll know it's ready when the dough feels smooth
and elastic.
Give it a 30 minute rest, I like to cover it with a bowl but you can also use cling
film instead.
After 30 minutes, remove the cover and you'll know the dough is ready because when you poke
it, it's gonna fight back.
Reflour the surface and now we're gonna laminate this 3 times.
And what do I mean by this?
Actually, it's easier than it sounds.
Roll it vertically until it's about 1 cm or half an inch in height and then fold both
ends to the opposite side.
And this is 1, and 2, and 3.
And now it's all about stretching this dough as wide as possible.
Keep on flouring the surface if you feel like you need to.
I like to shape the dough into one big square.
Then I fold it in half, and then I fold it again.
And I finally cut it with a knife into the size I want.
And as you can see, without that much work, I was able to create this beautiful homemade
pasta.
I cooked mine for about 2 to 4 minutes and it's perfectly al dente.
Don't forget to salt your water.
On the day I made it, I had the pasta with the delicious Bolognese sauce, and a few days
later with a quick and equally delicious mushroom sauce.
I'll leave both videos linked in the description.
I hope you enjoyed this video and let me know if you try this recipe.
Don't forget to give it a like and subscribe.
And we'll meet on the next one.
Until then, have a beautiful day.
Bye bye!
