🍰 Ingredients:

Shredded Coconut 90g (½ cup)
Crushed Pistachios a handful
Pistachio cream (shop-bought) 200g (about 1 cup)

Butter 110g (½ cup)
Sugar 150g (¾ cup)
2 Eggs
Plain Flour 150g (1cup)
Baking powder 1 teaspoon
Corn starch 30g (¼ cup)
Desiccated Coconut 45g (½ cup)
Coconut Milk 120ml (½ cup)
Vanilla extract 1 teaspoon

Measuring cup size - 240ml
Baking pan size 20x20 cm (8x8 inch)


Method:

In a bowl, add the Flour, Baking powder, Corn starch, Desiccated Coconut and the Sugar.
Mix well.
Now add the Eggs, Butter, Coconut milk and the Vanilla into the same bowl.
Whisk at low speed for about 30 seconds.
Mix well
Whisk again for about 30 seconds.
Give a final mix.

Now put in the baking pan.
And bake in a preheated oven at 175c (350f) for about 30-35 minutes

Poke holes in the warm cake.
Spread the Pistachio cream.
Add the shredded coconut on the top.

Enjoy warm or cold!
