Baking is one of those things we love
the idea of, but half the time it ends
with sugar crash and a kitchen full of
mess. So, in today's video, I'm showing
four of my go-to familyfriendly baking
recipes. They're gluten-free, made with
almond flour, and actually support your
blood sugar and hormone health. You can
make them with your kids, bring them to
a gathering, or just keep in the fridge
for when the craving hits. Let's get
into it. First up, the classic chocolate
chip cookie, which can be used to make
an ice cream sandwich. They're crispy on
the outside, soft in the middle, and
naturally grainfree. I use almond flour,
butter, a little honey or maple syrup,
and sugar-free chocolate chips. This is
a recipe card. You can screenshot it,
and it's from my school community. And
here's the best part. If you want to
take it up a notch, make a batch of mini
cookies and then sandwich them with some
real ice cream or yogurt for a high
protein cookie sandwich. It's a treat
that feels indulgent, but won't make
your blood sugar. What I love to do is
add some cacao powder into the dough.
So, I have a double chocolate chip
cookie. So fudgy, so good, and kids love
them, too. Next up, my chocolate brownie
cake. It's like the best of both worlds.
Fudgy like a brownie, but light enough
to serve as a cake. It's perfect for
birthdays, dinner parties, or just a
rainy afternoon. Again, almond flour is
the base with eggs, cacao powder, and a
little sweetener of choice. I use tiny,
but you can also do maple syrup. You can
top with some whipped cream or melt dark
chocolate if you're feeling fancy. Now,
this is the important tip. When adding
the baking soda, the more you add, the
fluffier the in cake gets. So, if you
want a real brownie- like texture, do
not add any baking soda. If you want to
have a cake, add some baking soda. In
the video, you're seeing a very fluffy
cake because I added a lot of baking
soda. If you want to have a more denser
version, just add less baking soda. I
hope that makes sense. Anyways, happy
remaking. These blueberry muffins are
always ahead, especially with kids.
They're moist, slightly sweet, and
packed with antioxidant rich berries.
The almond flour keeps it naturally
gluten-free and adds healthy fats that
help balance blood sugar. Again, almond
flour, the base with eggs, a little
sweetener, and you can also add some
Greek yogurt to help them keep a little
moist. I make double the batch and
freeze half for easy grab and go
breakfast or snacks. Pro tip, I like
adding a little lemon zest or vanilla
for that extra bakery style flavor.
Serve with a dollop of cottage cheese or
Greek yogurt for even more protein and
blood sugar balance. Last but not least,
waffles. These are so easy and perfect
for weekend brunch or batch cooking for
the week. Just mix almond flour, eggs,
baking soda, grass-fed whey protein
powder, a little melted butter, some
yogurt, and milk. You can make them
sweet or savory depending on your
toppings. I serve mine with Greek yogurt
and berries, or mango and fresh raw
whipped cream, or you can go full
carnivore if you don't want to have a
blood sugar spike at all and add bacon
and a fried egg on top. You can even
preheat them in a toaster the next day.
It's a total win. Oh, and also if you
want to have the batter to be sweetened,
just add a little honey or maple syrup
into the batter so you have got an
overall sweeter waffle. If you're making
it savory, you can add a pinch of salt,
some cheese, just anything that you want
to have in your waffle to flavor the
waffle itself without the toppings. If
